Often times in our house it seems that the main dish is the easy one to decide on, but then it’s like…what else? This is especially true when following a plant-based diet where sometimes it seems like the vegetables that make up the main dish just aren’t enough…especially with my husband. So lately, creative side dishes have become more of my focus. And just because they’re creative does not mean they have to be fancy or complex. Seriously, all they have to do is taste good! The easier, the better. And while I don’t believe I “created” this asparagus recipe, I’m sure there are 100 other recipes out there that are exactly the same, but I’m glad you came here to find it. Six ingredients and 25 minutes is all you need to make this simple side. And if you’re like me, you’ll end up making it at least once a week.
The Simple List’s Simplest Asparagus
- 10 stalks of asparagus, with edges cut about 1′ off the bottom
- 1/4 c olive oil
- 2 tbsp minced garlic
- 1/2 lemon, juiced
- salt and pepper
- Wash the asparagus off and cut the edges. Be sure to dry the asparagus thoroughly, then place in a ziploc bag
- Add olive oil, garlic, lemon juice, salt and pepper to the bag. Coat the asparagus, seal the bag and let marinade for 30 minutes if possible. If you’re short on time, just coat the asparagus then place directly on a baking sheet.
- Back at 425 degrees for 25 minutes until asparagus is crispy.
